Spring Smoked Salmon Bagel + the Fixin’s

 

Ever since returning from Chicago I have been on a serious smoked salmon bagel kick. On the last day of our little getaway I had the most delicious spring inspired breakfast before heading the airport. It was one of those meals that you get to put together at the table, like assembly style tacos, which is super fun for people like me who enjoy putting things together. Stella is like this too, always wanting to put her mark on her meals. I took note of all the components and then added a few of my own when I got back home. I think this is one of the most perfect spring meals because it can be eaten for either breakfast, lunch or supper and can be thrown together in a flask. There’s no real cooking, per se, so it’s quite simple. And healthy! Here’s what I have been doing to make it more this meal more breakfast/lunch/supper friendly:

Morning: add a soft-boiled egg to two because eggs make everything better

Afternoon: add an mixed herb or arugula salad with a vinaigrette based dressing on the side

Evening: add a healthy portion of roasted veggies and sweet potatoes on the side

Ingredients:

  • Smoked salmon or lox
  • Poppyseed, onion, everything, or plain bagel – you pick!
  • Cream cheese
  • Goat cheese
  • Honey
  • Fresh dill chopped finely
  • Fresh parsley chopped finely
  • Red onion or shallots sliced thinly
  • Cherry tomato sliced thinly
  • Cucumber sliced thinly
  • Champagne vinegar
  • Capers
  • Sea salt & pepper
  • Lemon

To prepare, follow the following steps: 

  1. Slice the cucumbers and onion and sprinkle about a tablespoon of champagne vinegar on top. Doing this first gives these veggies a chance to soak up the vinegar, pickling them and adding a nice acidic crunch to the bagel.
  2. Toast your bagel so it’s nice and golden.
  3. Mix equal parts of goat cheese and cream cheese in a bowl – I tend to do a tablespoon of each cheese per bagel plus a teaspoon of honey.
  4. Once your bagel is toasted you can assemble however you’d like. I usually do things in a different order every time, something to the tune of: bagel + cheese spread + cucumbers and onions + tomatoes + dill and parsley + smoked salmon + capers + sea salt and pepper + a little squeeze of lemon on top!

There you have it! A really simple meal idea that can be tailored to suit many different tastes. What spring meals are you eager to try this season?
